Yuji Kunii embarked on his sushi-making journey at a local restaurant in his hometown of Tokyo, Japan, when he was 15 years old. While others would travel great distances to master the art of sushi in Japan, Mr. Kunii was fortunate to be immersed in rigorous training at an early age. With unwavering passion, he worked closely alongside a master chef, honing his skills and delving into the true essence of crafting exceptional sushi and delivering impeccable service. This invaluable experience also granted him intricate knowledge of various fish varieties and specialized preparation techniques. Eventually, Mr. Kunii made his way to Chicago, where he dedicated seven years of his life working in a renowned establishment.
